Definitely a day to spend in the kitchen.
So, clean off the carcass from a roasted chicken and start broth. Then, pull the rest of the fridge dough out and prepare some onions, celery, roasted red peppers, spinach and sausage – roll it up in the dough with mozz and parmesan and bake it on the stone until the smoke alarm starts screaming – because a meal is not complete until the smoke alarm screams.
Of course, the innerds leaked out on the stone and if anyone has some good advice as to how to clean a pizza stone, please send it my way.
Next, cook spaghetti (because we appear to be out of angel hair) and cover the bottom of a baking dish. Layer with peas and chicken (from the roast) then make a cream sauce: butter, flour, milk, broth (from the roast), sundried tomato, thyme, pepper… add grated provolone, cheddar and parmesan and pour over the top.
It’s in the fridge awaiting to be cooked. If it’s any good, I’ll post a photo tomorrow.
It’ll be a quick turnaround for Michael between basketball practice and play rehearsal and, we’ll be ready.
Human resources director called today from a place I interviewed last week. Decision-makers are taking their time and it could be a couple weeks before position is filled. I am okay with that – I tried to tell her. She seems concerned about me waiting. No, really, it’s okay.
