3rd Week of January

15 below this morning – up to 10 this afternoon.
Definitely a day to spend in the kitchen.

So, clean off the carcass from a roasted chicken and start broth. Then, pull the rest of the fridge dough out and prepare some onions, celery, roasted red peppers, spinach and sausage – roll it up in the dough with mozz and parmesan and bake it on the stone until the smoke alarm starts screaming – because a meal is not complete until the smoke alarm screams.

Sausage, veggies, cheese... because "life is not meant to be lived without bread" - or cheese.

Sausage, veggies, cheese… because “life is not meant to be lived without bread” – or cheese.

Of course, the innerds leaked out on the stone and if anyone has some good advice as to how to clean a pizza stone, please send it my way.
Next, cook spaghetti (because we appear to be out of angel hair) and cover the bottom of a baking dish. Layer with peas and chicken (from the roast) then make a cream sauce: butter, flour, milk, broth (from the roast), sundried tomato, thyme, pepper… add grated provolone, cheddar and parmesan and pour over the top.
It’s in the fridge awaiting to be cooked.  If it’s any good, I’ll post a photo tomorrow.

It’ll be a quick turnaround for Michael between basketball practice and play rehearsal and, we’ll be ready.

Human resources director called today from a place I interviewed last week.  Decision-makers are taking their time and it could be a couple weeks before position is filled.  I am okay with that – I tried to tell her.  She seems concerned about me waiting.  No, really, it’s okay.

Cook, play, hug, sing and dream – as much as I can for as long as I can.

If it weren’t so cold, I’d hop in the car to come get some of that good food! As it is, I just made a blazing fire, and I’m now inspired to go create something yummy in my kitchen.

  2. whew! just put the chickens in and the cold took my breath away!

So, I made tacos. And meatballs for tomorrow. And also, I like your bread quote. 🙂

  4. I want a picture of your creation from last nights’ dinner! what an amazing combination! your sausage role is beautiful and almost made me want to eat it and I don’t eat meat!

Please don’t stop cooking, hugging, singing, dreaming and playing when you go back to the business world…:-( 🙂

  5. I made two sausage rolls & a spinach mushroom roll last night. Yummy. Not that this will clean your stone- but I had parchment paper under the rolls & it captured any mess–

  6. Thanks – I scraped off as much as would scrape yesterday and will definitely take your advice and use parchment paper for potentially oozing rolls
