Another Day One
This past Monday I declared as Day One – the day to start being healthy, eating well, being positive, taking care of my body, mind and spirit. I have pondered since how many “Day Ones” I’ve declared over the last 10 years.

Pasta with Kale and Tomatoes
So my sister pinned a photo of a one-pot dish with spaghetti, kale, grape tomatoes and feta and it was all I could think about. I had to have that combination of flavors. Kind of like when someone mentions that they had sushi and I can’t stop thinking about it, wanting it, craving it, until I finally go out and enjoy it.

So today was the perfect day to plant seeds. I had my seeds and the seedling soil (very exciting as I didn’t know a special soil for seedlings existed until I saw it at my sisters last weekend) and containers.
I sorted through the seeds for the ones to be pre-seeded before garden planting and cut up a plastic cottage cheese container to make labels.
